So i'm currently trying to complete the Spirit of Apollo quest, but whenever I kill an infernal skeleton with a bow without being hit (the specifications for the quest), it doesn't register that i did it.

Are you sure they are infernal skeletons and that you didn't get hit by any of them? If it still doesn't work try playing the spawner in a 10x10 cage and shoot them from above to see if that works. It's been a while since i have done it so im not too sure about how i did it. Hope this helps!
GGKort has all of the right suggestions. Also, there is another report of similar issues with the zombie killing quest. Try what GGKort said and then report it as a bug if that doesn't work. There have been a few bug reports since the update.
