There already is an entire parkour gamemode, however this is on Java. It has been suggested multiple times to bring this to Bedrock so there's a chance you'll get it on Bedrock soon. In the mean time you can always complete the two current lobby parkours! Here are the coördinates (these are from Java so I don't know if this is the same on bedrock tho):

1. -175 / 38 / -204
2. -208 / 38 / -236
