why cant I "shift click" items in the chest?

Hello, why cant I shift click item in the chest (to get all of my inventroy full of the same item)?
it takes long time to take out items without it...

How do I turn touch screen modus off. When I go to my options I don't see it anywhere.

If you click on the text balloon on the botton right you get a sort of menu with all of your messages and below that on the bottom you can see touchscreen mode on/off
