Why did they remove axes from the game? Without them we can't break wood or chests faster, and in the Bedrock version there is no kit that is at least a wooden axe with efficiency 1

They did remove axes from the spawn island with the 1.19 update. However, there is still a chance of finding a wooden axe in the middle island. Aside from that, you can always just craft one. If you are talking about SkyWars, I agree that more ways to get axes would be great.

I believe they are referring to axes in SkyWars.
