It depends on how many people speak Polish. If there are enough, then maybe they could add one.

As Goefy said above.. there are barely any Polish people on cubes discord. Creating a new chat for polish players is useless, because it would most likely be a dead chat. They can use #other-languages instead
ukrainian chat is betterI think the idea for a Polish chat is not bad, because then more people could come to Discord cubecraft. And the Polish community would develop. But I think it would be better to add Russian chat.
