And Yes, more games is always fun.
I have found the Elytra method of transport interesting, would you suggest any game-modes for it?

Could you think of a game and work it out, that would be cool!
I think game with a lot of fireworks could make players lag, but I don't really have an opinion.
Wing rush is a pretty cool elytra game so I suggest you check it out.

Elytras would be good for overpowered Eggwars, Also. There's your thinking about Wing Rush, You can already boost by pressing "F"

There is really no benefit to the players from allowing outdated minecraft versions imo. 1.8 might be an exception because some people don't like the changes made. But noone prefers 1.9 over 1.11. The only reason to allow 1.9-1.10 clients I can think of is being too lazy to update the server.

This would split the whole community, some players play in 1.11 and some play in 1.9 so no.
