If you would like to reset your coop island, you’ll have to go to the skyblock menu. Click profiles, click profile 2, scroll to the bottom, click leave profile. And then simply create a new coop.
To make a coop profile go to the skyblock menu. Click profiles, click profile 2 and click join/create.

Even if you plan to play solo, co-op is the way to go in my opinion. That way you always have the option of playing with others later.
SkyBlock rank cost a few bucks but it is well worth the money in my opinion for this reason.
