I'm really bad at things like this lol, but still gonna try to help.
Maybe she has had problems in a past relationship because of which she is scared to fully trust someone else yet? Maybe ask her about that and try to show her you are different and that you understand her, so that she'll see she can fully trust you. You've already done so much with her!
