Snowballs and eggs would be a nice addition on bedrock, but I'm not too sure about rods. I agree that they should add them all on java, however. SG should be kept simple for everyone since it's a little difficult to compete against others depending on what you play on.

I agree. I was a little confused at first when I saw that I was moved to a different server when they added new ones for lower ping.

I agree strongly. A few things they could implement is less blocks, or lowering the maximum height. I've also encountered players building onto or mining inside the structures placed onto the map in order to gain an advantage. Maybe more flat maps with no structures?
