Does anyone have any idea how this seems to run Spigot on Bedrock?

The only mostly feature-complete translator is ProtocolSupport PE, but that doesn't support that latest versions of Java or Bedrock. Others, such as Geyser and DragonProxy, are nowhere near ready.

So how do you do it?

Is it forked from something open-source? If it's GPL then you'd have to release it.

They are very secret with their coding work because people could potentially steal or use it

That is pretty much the idea of open-source so that other people can use it and make the project even better. There will always be copycats (even without making it open-source) but that should not be the reason to stop developing new things.

Ah yes, let's just release all of our custom code that we had to build from the ground up to make this possible. Not going to happen.

As for licensing, our custom code doesn't touch anything GPL related so we don't have to release anything.

Ah yes, let's just ignore one of the biggest problems people have with Minecraft Java (crossplay) that we have a solution to right here and we're not even using, instead of giving ourselves a very good name in the community and making some extra money through ads on the plugin page or something.

He resigned from Developer,so he can’t do anything related to that anymore

Actually,

1. Minecraft is closed-source
2. The GPL does not mandate such release; that's what the AGPL does (which neither Minecraft nor Spigot are)
3. They're probably using GeyserMC, given that they're officially partnered with that plugin ;P
